  • 1 ½ cups (3 sticks) unsalted butter (339 g)
  • ½ cup granulated sugar (105 g)
  • 1 ½ cups powdered sugar (172 g)
  • ½ teaspoon salt (4 g)
  • 4 cups all-purpose flour (548 g)
  • Optional (if making red, white and blue cookie sticks): few drops of red and blue gel food coloring
  1. Line two cookie sheets with parchment paper.
  2. With the flat beater of a stand mixer, cream the butter until light and smooth.
  3. Gradually add the granulated sugar and mix until light and fluffy. Mix in the salt.
  4. Gradually add the powdered sugar and beat until well combined.
  5. Gradually add the flour and beat until well combined.
  6. To make red, white and blue cookie sticks, divide the dough in three portions allowing more dough for the white and red portion and less for the blue.
  7. Mix in 1 -2 drops of gel food coloring to tint one part of the dough red. Mix in blue gel food coloring to the smaller portion. Leave the third portion untinted.
  8. Wrap each color separately in plastic wrap and chill for about 15 – 20 minutes.
  9. Preheat oven to 300°F. Move the oven shelf to the lowest level just above the heating element to avoid over browning. Roll out dough into a rectangle between two sheets of waxed paper. Use a knife or bench scraper to slice the dough into thin strips about ¼ inch wide x 6 inches long. Use a small cookie cutter to cut out some white stars.
  10. Transfer the sliced dough onto the cookie sheet and bake for 12 minutes. Remove from the oven and let the cookie sticks cool completely on the cookie sheet. Store in an airtight container at room temperature.
  11. Variation: For chocolate covered cookie sticks, melt 2 cups white chocolate chips or semi-sweet chocolate chips in a double boiler. Remove from heat and stir in 3 tablespoons of canola oil. Pour the chocolate in a tall narrow glass. Dip the cookie sticks in the chocolate and coat with nuts or sprinkles. Chill the chocolate-covered cookie sticks to let the chocolate completely set.
