Super Easy Delicious Cookie Balls with Diced Walnuts

A delightful, quick and easy recipe for cookies shaped into balls, so delicious it’s hard to stop at just one cookie.

Serves: yields about 60 cookie balls
  • 1 cup (2 sticks) unsalted butter
  • ½ cup powdered sugar (+ 1 ½ cups for coating baked cookies)
  • 1 teaspoon almond extract
  • 1 teaspoon orange extract
  • ¼ teaspoon salt
  • 2 cups all-purpose flour
  • 2 cups finely diced walnuts
  1. Preheat oven to 325°F. Line two cookie sheets with parchment paper.
  2. With the flat beater of a stand mixer, beat butter until light and smooth.
  3. Gradually add ½ cup powdered sugar. Add salt, almond and orange extracts and beat until well blended and creamy.
  4. Add flour and beat to combine. Then add nuts and beat until well distributed.
  5. Shape cookie dough into balls about 1” in size. For uniformly sized cookie balls, use a small cookie scoop to measure out the dough then roll the dough between your hands to make a ball.
  6. Line cookie dough balls on cookie sheet and bake for 20 minutes.
  7. Place 1½ cups powdered sugar in a bowl. Remove baked cookies from oven. While cookies are still warm, roll in the bowl of powdered sugar to coat. Line them up again on the cookie sheet to cool completely.
  8. Once the cookies are completely cool, place a small amount of powdered sugar in a small sifter and lightly sprinkle over the cookies for an even coating of powdered sugar.
  9. Yields about 60 cookie balls. Keep at room temperature in a covered container.
